JOB OVERVIEW:
Sous Chef is fully in-charge of all aspects of a single kitchen (e.g. Pastry Kitchen, Garden Manager, Outlet Kitchen or Oriental Kitchen) The duties and responsibilities include food purchasing, food storage, food preparation, presentation, food cost and food quality. Menu creation, menu rotation, promotional activity, labor cost, managing daily operation and kitchen staff performance, departmental training, kitchen hygiene and safety. Adapt to the “One Team and Service” attitude of the InterContinental Hotels Group and the brand nature.
DUTIES AND RESPONSIBILITIES
FINANCIAL RETURNS:
Work within month set food cost budget, adjust requisitions reduces waste and spoilage.
Creates and implements menus, recipes, and costing and food quality standards.
Controls all food requisitions and orders to ensure proper quantities and best quality is purchased.
PEOPLE:
Provides direction to the, Chef de Partie and Demi Chef de Partie.
Educate and train team members in compliance with company standards, service behaviors and country regulations.
Continually train staff on a regular basis.
GUEST EXPERIENCE:
Communicates politely and display courtesy to guests and internal customers
Establish and maintain guest relation, deal effectively with guest and take appropriate action to resolve guest complaints.
Ensure guest needs and reasonable requests are met.
RESPONSIBLE BUSINESS:
Ensure that equipment's, stores and working areas are in proper operational condition and cleaned on a regular bases.
Maintain high quality of food up to the hotel standard.
Ensure all set of standard for hygiene; sanitation and safety are followed all times.
